Healthy Lunch Quesadilla

Being at home all the time we get bored of the same old lunches. This is a healthy fun alternative to try!

WE LOVE JOSEPH'S WRAPS!!! They are so delicious and a healthier alternative to tortillas. They are filled with protein which is an added bonus! We love messing around and experimenting with all different types of Mexican food. It it definitely one of our favorite cuisines to cook. We always love a simple recipe for lunch that is filled with flavor and it is so simple to make. This quesadilla checks of all the boxes!


Ingredients:

1 can of black beans

1 jar of salsa of your choice

1 Joesph's wrap or a tortilla or your choice

Shredded Cheese of your choice (this could be easily a vegan meal with vegan cheese!)

1 Avocado


Directions:

  1. Drain and rinse the beans.

  2. Pour the beans into a bowl and add 1 tablespoon of olive oil.

  3. Add salt, pepper and garlic powder to taste. (If you want some spice add a some red pepper flakes)

  4. Spray a pan over medium heat with cooking oil.
