S'mores cookies

Summer in a cookie!


As we are all waiting for summer to come these cookies will remind you of how close summer is. They truly taste like warm summer nights, sitting by a fire pit. You will adore these cookies, they are light, fluffy, and filled with delicious treats. If you like s'mores you must try these!


Yield 6 cookies

Ingredients

  • 5 tbsp unsalted butter room temperature

  • 2 tbsp cup granulated sugar

  • 1/4 cup light brown sugar

  • 1 egg

  • 3/4 tsp vanilla extract

  • 3/4 cup all-purpose flour

  • 1/4 tsp. baking powder

  • 1/4 tsp. baking soda

  • 1/2 tsp cornstarch

  • 1/2 cup semisweet chocolate chips

  • 1/2 cup marshmallow bits, divided

  • 2 Graham crackers

Ingredients

  1. Preheat your oven to 350°F

  2. Mix together the flour, baking powder, baking soda, and cornstarch.

  3. In a separate bowl, beat the softened butter and sugars until creamy. Add in the egg and vanilla to mixture.

  4. Then add the dry ingredients and wet together until fully combined.

  5. Break the Graham crackers into smaller pieces and cut marshmallows in quarters (save a few marshmallows for later). If the marshmallows are too big, they will explode in the cookies, so be sure to cut them into small pieces.

  6. Add the graham crackers, chocolate chips, and marshmallows into the dough

  7. Put the dough into the fridge for 20-30 minutes

  8. Roll the dough into six balls and put them on a greased pan

  9. Bake the cookies for 13-15 minutes total or until golden, but at 10 minutes, put the extra marshmallows on top of the cookies. If any of the cookies bursted while baking because of too many marshmallows you can take a spoon and push the excess back towards the cookie.
