Healthy Chocolate Chunk Cookies

HEALTHY chocolate chunk cookies?! Yes please!




After changing up the recipe these cookies are finally perfect. This recipe makes 4 perfect gooey cookies. You have to try these delicious, gluten free, soft, and chewy cookies! They are amazing!


Yield: 4 cookies

Ingredients:

  • 3 tablespoons coconut oil, melted

  • 1/3 cup coconut sugar

  • 1 teaspoon vanilla extract

  • 1 egg yolk

  • 1 tbsp maple syrup

  • 1/4 teaspoon baking soda

  • 1/2 cup gluten free flour (when measuring don't over pack the cup. Fill up the measuring cup and mix it with a spoon so it is fluffy and not as full. If you add too much flour the cookies will not spread correctly)

  • 1/2 cup dark chocolate, chopped


Directions:

  1. Preheat the oven to 360°

  2. In a bowl mix together the coconut oil and coconut sugar

  3. Add the baking soda, egg yolk, maple syrup and vanilla and beat together

  4. Add the flour and combine. Then, fold in the chocolate.

  5. Divide dough into 4 equal balls and place on a greased cookie sheet

  6. Bake for 10-12 minutes

  7. ENJOY!
