These gooey Cinnamon Rolls are so easy, have no yeast, and healthy-ish... you know you have to make these!
THESE CINNAMON ROLLS! Okay they are gooey, cinnamon, deliciousness!! You have to make them, they are calling your name. And they are a healthier option than traditional cinnamon rolls and are super simple to make. AND they don't require any yeast. You can make your own oat flour very easily, by blending oats in a blender until smooth. Or you can always buy oat flour, we usually make our own but either will work.
Dough Ingredients
1 cup oat flour
1/2 cup greek vanilla yogurt
1 tbsp coconut oil
2 tbsp maple syrup
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1 tbsp flour of choice for rolling your dough (we recommend all purpose flour or gf flour)
Filling Ingredients
1 tbsp butter or coconut oil (we used butter)
1/4 cup brown sugar or coconut sugar (we used brown sugar)
1 tsp cinnamon
Glaze Ingredients
3/4 cup powdered sugar
2 tbsp coconut oil
1/2 tsp vanilla
2 tbsp hot water (add more or less, depending on the consistency you want)
Directions
Preheat your oven to 350°
Mix together all of your dough ingredients until combined
Flour a clean smooth surface and roll out your dough into a rectangle about 1/2- 1 inch thick
Evenly spread the butter (from the filling ingredients) onto the dough and then sprinkle on your brown sugar and cinnamon
Starting at the long side of your dough, tightly roll the dough into a log
Using a sharp knife, cut your dough into six equal rolls
Put the rolls into a greased pan and cook for 20-25 minutes
While the rolls are in the oven, combine the powdered sugar, melted coconut oil, and vanilla. Slowly add in your hot water until you are happy with the consistency
When the rolls are ready, let them sit for 10 minutes before putting the icing on them
