Healthy Banana Oat muffins

These muffins are so chocolatey and delicious, you would never know how healthy they are!

These muffins!!! They are the easiest and perfect for breakfast, snack or dessert. They are the best because they are easy to prepare ahead of time, so you can just grab them and eat! All you do is throw these together and blend the batter. This recipe has been a staple in our house for years but recently we have been tweaking it to make it perfect. And now, it is PERFECT😋


Yield: 12 muffins

Ingredients:

•2 Bananas

•1 cup Plain Greek Yogurt

•2 Eggs

•2 cups Oats

•1/4 cup Maple Syrup

•1/2 tsp Baking Soda

• 1 1/2 tsp Baking Powder

•1 tsp Vanilla

•1/2 tsp Cinnamon

•1/2 cup Dark Chocolate Chips/Chunks


Directions:

  1. In a blender, blend the oats until they have a flour consistence. Then separately blend the bananas until they are fully liquid and there are no clumps.

  2. In a bowl, mix together all of your dry ingredients and then stir in the wet ingredients. Next fold in the chocolate chunks.

  3. Pour the batter into 12 greased muffin tins.

  4. Cook at 400° for about 14-16 minutes.
