Okay, we know what you are thinking "ughh more greens", but this pasta filled with leafy greens is not only delicious but a great way to eat those greens and enjoy it!
This pesto sauce is a favorite in our house. You can of course have it with pasta (our favorite way to eat it) but it is delicious with bread or could be used on chicken as well. We love pesto and began making this recipe when we only had a limited amount of basil. Over the summer we were making foods with basil so often our basil plant was running low on leaves. Luckily we had a box of spring mix to add to our pesto and we loved the result! This recipe is simple and is a delicious way to eat your greens.
Ingredients:
3/4 cup of basil
1/4 cup spring mix lettuce
1 garlic clove
1/3 cup of oil
3 tbs parmesan cheese
Salt and Pepper to taste
Directions:
1. Put the basil, spring mix lettuce, garlic clove, oil, and parmesan cheese in a food processor or blender.
2. Season with salt and pepper to taste
3. Put it on top of your favorite pasta!*
4. Top with mozzarella, parmesan and tomatoes if desired
5. ENJOY!
* If we are trying to be healthy we use Barilla protein+ pasta, which is pictured above (and we love it, it is a staple in our house!). If we aren't worried about being super healthy we will use Rao's Penne or Pastificio G. DiMartino Penne. BUT if we are feeling adventurous we use homemade pasta :)
